This collaborative beer is a lovely fresh, rasping IPA made with Brettanomyces yeast, and the result is very good.
The aroma is bitter lemons and sweet silage, and the malting is all pancakes with golden syrup, lemon and burned sugar.
You get a bunch of hedgerow hops too, zingy grapefruit zest and pithy heather giving you a properly bitter dry kick in the face, and all the time the yeast chugs away underneath with its warm round earthy meatiness, a little mushroom dampness and a load of spice.
If I had two bottles and patience I’d like to keep this for a year and then try it again, but I have neither.
