When Mad Hatter get it right they get it really right, and this is one of those times.
Brewed with quince, this Tripel is a big boozy fruity bottle of joy.
Pouring a conker red, the smell is honey, pear juice and brandy snaps, and that’s pretty much where the flavours start.
You find a a chewy honey and brioche bun forming the body of the beer, while the quince adds a pear flesh juiciness that really compliments the hedgerow greenery of the hops.
Nettle tea and hazel, lemon zest and dandelions all make for a lovely dry bitter finish that’s tempered by a deep warm booziness and a the background hum of the earthy yeast.
In a word, yum.
