Overtone Brewing Co. Entitled Saison (7%)

This Saison, brewed in collaboration with Deadend Brew Machine is really very good.
And it’s the heather honey that does it for me.
Deadend’s Saison Blend yeast is a star here as well, with lots of funky farmyard silage and spicy fungal woodland undergrowth creating a background hum that gives the beer a great big body.
The malting is soft and sweet, all sugared almonds, candy floss and caramel coated buns, while 5e hops add their own hit of steely herbal greenery, mandarin zest and lemon curd.
But it’s the Scottish heather honey that slops around all over the beer, bringing a delightful wash of rich and creamy, florally scented salty sweetness that adds a beautiful extra dimension to what without it would still be a very good beer.
